As leveduras da esp\u00e9cie <em>Dekkera bruxellensis<\/em> s\u00e3o respons\u00e1veis por graves perdas econ\u00f4micas na ind\u00fastria do vinho devido \u00e0 sua capacidade de estragar vinhos pela produ\u00e7\u00e3o de etilfen\u00f3is. Algumas autoridades consideram que o \u201cbrett\u201d \u00e9 respons\u00e1vel por 90% dos problemas de deteriora\u00e7\u00e3o em vinhos tintos de alta qualidade. No entanto, na produ\u00e7\u00e3o de cerveja (especialmente cervejas artesanais ou especialidades belgas), <em>Dekkera bruxellensis<\/em> frequentemente n\u00e3o \u00e9 considerada um contaminante, mas sim um enriquecedor de sabor.<\/p>\n<\/div><div class=\"block-tabs__content  tab-wine-2\"><p>Na produ\u00e7\u00e3o de vinho, a fermenta\u00e7\u00e3o malol\u00e1tica \u00e9 apoiada por <em>Lactobacillus.<\/em> Durante este processo, a bact\u00e9ria <em>Oenococcus<\/em> oeni pode ser adicionada como uma bact\u00e9ria altamente especializada.
