Intended use

RIDASCREEN®EASY Hazelnut (Art. No. RAE6401) is a sandwich enzyme immunoassay for the quantitative analysis of contaminations by hazelnut protein in foods. Hygiene samples can be investigated according to an application note, too.

General Information

Hazelnuts are one of 14 allergens that must be specifically labeled as ingredients on food products in the EU according to Regulation (EU) No. 1169/2011. Similar regulations exist in the US, Canada, Australia, and New Zealand, for example.
Allergic symptoms include skin rash, swelling, shortness of breath, asthma, stomach pain, nausea and vomiting, and can even result in an anaphylactic shock. Those affected must therefore strictly avoid foods that contain hazelnut protein. Incorrect labeling therefore poses a major risk to people with hazelnut allergies. Another source of danger is the unintentional introduction of hazelnut protein through cross-contamination during processing, storage, transport and packaging of food.
Even small amounts of hazelnut protein in food can cause allergic reactions. At the WHO/FAO, a risk assessment was done based on clinical studies and experts agreed on the fact that 5 % of people with hazelnut allergies show mild reactions without developing life-threatening symptoms when consuming up to 3 mg of hazelnut protein. 95 % of allergy sufferers show no symptoms. For this reason, in 2022 the WHO/FAO published a quantity of 3 mg of hazelnut protein as the so-called reference dose for triggering symptoms in 5 % of affected allergy sufferers (eliciting dose ED05). This is set in relation to a typical amount of food consumed to correctly assess the risk for allergy sufferers of a measured concentration of hazelnut protein in mg/kg in a food. This is how action levels for labeling allergens on food products are defined. For example, the intake of 3 mg of hazelnut protein correlates with the consumption of 100 g of a food product containing a concentration of 30 mg/kg of hazelnut protein. For a higher consumption of 400 grams, the tolerable concentration is 7.5 mg/kg of hazelnut protein. To ensure sufficient precision of detection methods, it is recommended to use a method whose limit of quantification (LoQ) is three times lower. The RIDASCREEN®EASY Hazelnut ELISA meets this requirement.
The allergy-causing proteins in hazelnuts do not lose their allergenic effect through food processing. However, some processes can influence the detection of the allergen in a test. As part of the validation of RIDASCREEN®EASY Hazelnut, processed samples that were contaminated with hazelnuts prior to processing were therefore also examined. The hazelnut allergens in these types of samples (incurred samples) have undergone essential steps in food production, thus enabling a more realistic assessment of the performance of a test method.
