Ochratoxine
Het mycotoxine OTA (Ochratoxine A) wordt gevormd door de schimmels van de Aspergillus– en Penicillium-soorten.
Het wordt voornamelijk gevonden in granen, noten, peulvruchten, koffie, specerijen en gedroogd fruit, wanneer de voedingsmiddelen vóór het opslaan onvoldoende zijn gedroogd. Niet alleen voeding van plantaardige oorsprong wordt ermee besmet. Voeding van dierlijke oorsprong kan ook schadelijk zijn voor de gezondheid van mensen. Het toxine kan zich ophopen in de organen van de dieren die gevoerd worden met besmet voeder, wat leidt tot substantiële economische verliezen in samenhang met de veestapel. Ochratoxine A werd al gedetecteerd in bloed en nieren van varkens en in bloed en moedermelk bij mensen. Er wordt aangenomen dat ochratoxine A bij mensen de reden is voor de zogenaamde endemische familiaire Balkan-nefropathie, die wereldwijd voorkomt in gebieden waar hoge concentraties ochratoxine kunnen worden gevonden in zaden en granen.
Grenswaarden voor ochratoxine zijn voor veel voedingsmiddelen beschikbaar. Verder werd een grenswaarde van 30 μg/kg gespecificeerd voor peperproducten (inclusief chilipoeder, cayennepeper en paprikakruiden) met ingang van 31-12-2014, die daarna werd verlaagd tot 15 μg/kg.

RIDASCREEN® ELISA-testen en de OCHRACARD® screeningkaarten zijn verkrijgbaar voor de screening en kwantificering van ochratoxine A in verschillende monsters. Immunoaffiniteitkolommen zoals OCHRAPREP® worden in combinatie met HPLC gebruikt om complexe en sterk-gekleurde voedingsmonsters, inclusief specerijen, te zuiveren. Hierbij wordt het desbetreffende mycotoxine geconcentreerd om zeer gevoelige en exacte testresultaten te behalen.
