Zuivel
Van de melkproductie tot het eindproduct moeten veel stappen worden gecontroleerd en bewaakt om veilige producten van een hoge kwaliteit te verkrijgen.
R-Biopharm testkits kunnen gedurende de hele zuivelproductieketen worden toegepast: van grondstoffen tot tussenproducten tot eindproducten, van de inspectie van binnenkomende goederen tot monitoring van de hygiëne en uiteindelijk tot de productanalyse voor de juiste etikettering. Ons grote portfolio van verschillende testformats kan worden gebruikt voor de analyse van melk, melkpoeder, kaas, yoghurt en veel andere zuivelproducten.
Hygiënemonitoring
Zuivelproducten bevatten een verscheidenheid aan micro-organismen. In veel gevallen zijn bacteriën gewenst of zelfs vereist, bijvoorbeeld voor de productie van kaas. Maar sommige micro-organismen zoals Salmonella, Listeria, E. coli, Staphylococcus aureus en Bacillus cereus zijn pathogeen en kunnen door voeding overdraagbare ziekten veroorzaken. Bovendien is het belangrijk typische bederforganismen te monitoren om verliezen tijdens de productie te verminderen en de stabiliteit van het product tot de aangegeven houdbaarheidsdatum te waarborgen.
Mycotoxines
Wanneer melkproducerende dieren voeder krijgen dat met aflatoxine is besmet, kan de melk het potentieel toxische aflatoxine M1 bevatten. Omdat aflatoxine M1 relatief goed bestand is tegen hittebehandeling en melkverwerking, wordt aanbevolen om de rauwe melk en tevens het eindproduct te controleren.
Antibiotica
Afgezien van het mogelijke gezondheidsrisico voor consumenten, vormen antibiotica-residuen een economisch risico omdat ze biotechnologische productieprocessen waarbij micro-organismen betrokken zijn, kunnen hinderen. Commissie-verordening (EU) nr. 37/2010 legt toelaatbare niveaus van antibiotica in voedingsmiddelen van dierlijke oorsprong vast, bijvoorbeeld voor melk 4 ppb penicilline, 100 ppb tetracycline en een nultolerantie voor chlooramfenicol.
Voedselfraude
Melk behoort tot de voedingsmiddelen waarmee het meest wordt gefraudeerd. Om melkproducten te identificeren waarmee om economische redenen is gefraudeerd, kunt u onze gevoelige testkits gebruiken.
Allergenen
Er zijn miljoenen mensen die voorzichtig moeten zijn met de consumptie van melk en zuivelproducten vanwege lactose-intolerantie. In de meeste landen is het verplicht de ingrediënten die allergieën of intoleranties kunnen veroorzaken, op het etiket te vermelden. Onbedoelde contaminatie komt echter vaak voor. Daarom moeten fabrikanten hun producten testen om ervoor te zorgen dat de etikettering correct is en dat terugroeping van producten niet nodig is.
Suikers, zuren, en andere bestanddelen
Enzymatische analyse is een waardevol hulpmiddel om veel stoffen te identificeren die in melk en kaasproducten aanwezig zijn, zoals lactose, melkzuur, glutaminezuur, ammoniak, nitraat of ethanol. Veel enzymatische methoden zijn goedgekeurd of gevalideerd door internationale organisaties zoals de AOAC (bijv. officiële methode 984.15, lactose in melk), de IDF (bijv. IDF 34C, citroenzuur in kaas en melk) en ISO (bijv. ISO 11285, lactulose in melk).
Vitaminen
Zuivelproducten worden vaak verrijkt met essentiële vitaminen om voldoende inname door de bevolking te waarborgen. Fabrikanten moeten ervoor zorgen dat de toegevoegde en natuurlijke vitaminegehaltes tot het eind van de vermelde houdbaarheidstermijn overeenkomen met de gegevens op het verpakkingsetiket.
