Gliadine/gluten
Mensen die lijden aan coeliakie moeten voedingsmiddelen met gluten vermijden. Daarnaast onthoudt een groeiende groep consumenten zich van glutenhoudende voedingsmiddelen.
Het produceren van gezonde, smakelijke producten die glutenvrij zijn, kan een uitdaging vormen. Fabrikanten die glutenvrije voeding produceren, moeten ervoor zorgen dat hun producten voldoen aan de wettelijke eisen voor glutenvrije voeding. Het testen op gluten (gliadine) is een essentieel onderdeel van de kwaliteitscontrole. Wij bieden een uitgebreid assortiment testkits aan voor kwaliteitscontrole van uw producten.
Lateral flow test voor glutenanalyse
U kunt beginnen met het testen op oppervlakken in de productieruimten. Gebruik een lateral flow test zoals de RIDA®QUICK Gliadin als swabtest voor oppervlakken. Let erop dat glutensporen in het laboratorium aanwezig kunnen zijn. Controleer dus vóór het testen op gluten of uw laboratorium vrij is van glutensporen. De RIDA®QUICK Gliadin lateral flow test kan ook worden gebruikt voor het testen van ingrediënten en grondstoffen.
Glutenextractiemethoden
Nadat u de productieomgeving hebt gecontroleerd op glutensporen, test u de grondstoffen en eindproducten op gluten. Effectieve extractie van gluten uit voeding is een cruciale stap in de analyse. Afhankelijk van de voedingsmatrix en de gekozen testmethode kunt u kiezen voor ethanolextractie of de gepatenteerde Mendez Cocktail extractie.

ELISA-test voor glutenanalyse
Kies ten slotte de geschikte glutentestkit voor uw producten. Gebruik de sandwich-ELISA voor het testen van de meeste voedingsmiddelen en gebruik de competitieve ELISA voor het testen van gefermenteerde of gehydrolyseerde producten als bier, siropen of zuurdesem.
Alle bovengenoemde testkits zijn gebaseerd op het R5-antilichaam (Mendez). De Codex Alimentarius specificeert in codex-standaard 118-1979 (2008) de op R5-antilichaam gebaseerde ELISA als de standaardmethode voor de bepaling van gluten. De RIDASCREEN® Gliadin ELISA en RIDASCREEN® Gliadin competitive zijn officiële AOAC-analysemethoden.
