Vlees
Bij de productie van vleesproducten moeten veel stappen worden gecontroleerd en gemonitord om veilige producten van een hoge kwaliteit te verkrijgen.
R-Biopharm testkits kunnen gedurende de hele voedingsproductieketen worden toegepast: van grondstoffen tot tussenproducten tot eindproducten, van de inspectie van binnenkomende goederen tot monitoring van de hygiëne en uiteindelijk tot de productanalyse voor de juiste etikettering. Ons uitgebreide portfolio van verschillende testformats kan worden gebruikt voor de analyse van rauw vlees (rund, varken, gevogelte), worsten, ham, eetbare weefsels, controlematrices (bijv. haar) en nog vele andere.
Antibiotica
Onjuist of illegaal gebruik van antibiotica bij vee kan leiden tot geneesmiddelresiduen in vlees en vleesproducten die gezondheidsrisico’s voor consumenten met zich meebrengen. Bovendien kan het onjuiste gebruik van antibiotica bijdragen tot multiresistentie van pathogene bacteriën. Commissie-verordening (EU) nr. 37/2010 legt toelaatbare niveaus van antibiotica in voedingsmiddelen van dierlijke oorsprong vast, bijvoorbeeld in vlees (spier): 100 μg/kg tetracycline, 500 μg/kg streptomycine, 150 μg/kg bacitracine en een nultolerantie voor chlooramfenicol.
Hormonen en anabolen
Hormoon- en anabolenresiduen in vlees kunnen gezondheidsrisico’s voor consumenten met zich meebrengen. Daarom is in de meeste landen het gebruik van hormonen en anabolen in de veeteelt volledig verboden met uitzonderingen voor veterinaire doeleinden.
Hygiënemonitoring
Micro-organismen zoals Listeria, Salmonella, Campylobacter, E. coli of Staphylococcus aureus kunnen door voeding overgedragen ziekten veroorzaken. Bovendien is het belangrijk typische bederforganismen te monitoren om verliezen tijdens de productie te verminderen en de stabiliteit van het product tot de aangegeven houdbaarheidsdatum te waarborgen.
Mycotoxines
Vlees en vleesproducten kunnen zijn besmet met ochratoxine A. Deze toxische secundaire metaboliet die door schimmels wordt geproduceerd, kan zich in diverse landbouwproducten ophopen. Vlees wordt besmet als dieren gevoerd worden met voeder dat met ochratoxine A is besmet. Besmet vlees kan een gezondheidsrisico vormen voor consumenten.
Voedselfraude
De wisselende prijzen en beschikbaarheid van vleesproducten van verschillende diersoorten (bijv. rund, paard) zorgt voor verleidingen tot onjuiste etikettering van vleesbestanddelen. De identificatie van diersoorten is daarom erg belangrijk om de kwaliteit te waarborgen. Bovendien zijn mensen geïnteresseerd in de diersoort om religieuze redenen (halal en koosjere voeding). Om fraude en financiële schade te vermijden, dienen fabrikanten hun producten met real-time PCR te testen.
Zuren, suikers en andere bestanddelen
Zuren en suikers worden vaak als additieven in de vleesproductie gebruikt. Melkzuur en azijnzuur worden bijvoorbeeld toegevoegd aan vleesproducten om de microbiologische stabiliteit te vergroten. Ascorbinezuur wordt gebruikt als een roodmakend middel en als een antioxidans. Met citroenzuur laat het vel van worsten gemakkelijker los en worden kleur, smaak en aroma gestabiliseerd. Glutaminezuur intensiveert de smaak. Glucose, fructose, lactose en maltose worden toegevoegd voor de smaak en ter conservering. De bepaling van het zuur- en suikergehalte is daarom erg belangrijk bij de vleesproductie.
Allergenen
Kruidenmengsels die worden gebruikt bij de productie van worsten of andere vleesproducten, kunnen selderij, gluten, mosterd, noten, melk of andere ingrediënten bevatten die allergieën of intoleranties kunnen veroorzaken. In de meeste landen is het verplicht de ingrediënten die allergieën of intoleranties kunnen veroorzaken, op het etiket te vermelden. Onbedoelde contaminatie komt echter vaak voor. Daarom moeten fabrikanten hun producten testen om ervoor te zorgen dat de etikettering correct is en dat terugroeping van producten niet nodig is.
