Gluten Analysis in 2026: State of the Art, recent Advances and Innovations

Gluten analysis comprises a variety of methods for the qualitative and quantitative determination of gluten. Commonly used methods in food production include immunoassays such as ELISA and lateral flow devices (LFDs), as well as DNA-based methods like PCR. These methods are commonly used to detect contamination and play a crucial role in ensuring the safety of foods for individuals with celiac disease.

Immunoassays use antibodies to detect gluten residues in a wide range of sample types. Among the best-known antibodies for gluten detection are the G12 and R5 antibodies, which differ in their specificities and other characteristics. But what exactly are the differences between them, and which antibody is better suited for gluten analysis?

Over the past few years, significant advances have been made in gluten analysis. At the same time, new requirements have emerged for the validation of analytical test systems according to the latest AOAC guidelines.
