Desde el escándalo de la carne de caballo, la concienciación sobre la adulteración y el fraude alimentario ha aumentado considerablemente.
Factores como la variación de precios y la disponibilidad de los productos alimentarios de diferentes orígenes se pueden aprovechar para realizar una declaración incorrecta de los componentes, tanto desde el punto de vista de la calidad como de la cantidad. Por ejemplo, la carne de caballo podría especificarse en la etiqueta como carne de vacuno. Estas alteraciones se pueden detectar con alta especificidad y cuantificar de forma relativa mediante PCR en tiempo real (por ejemplo, con porcentajes de la especie animal respectiva en relación con la cantidad total de carne).
Además, la determinación de la especie animal en los productos cárnicos también puede ser necesaria por prescripciones religiosas (halal y kosher). Las investigaciones realizadas por motivos religiosos, en especial en relación con el cerdo en productos cárnicos o alimentos procesados, no incluyen ningún valor umbral técnico. Esto significa que para la detección de la carne de cerdo se necesitan pruebas puramente cualitativas y especialmente sensibles. El PCR en tiempo real es el método de elección. La sensibilidad efectiva de los análisis de PCR en tiempo real se basa en la existencia de ADN intacto, lo que dificulta la detección sensible de alimentos muy procesados como la gelatina.
