Aflatoxine
Aflatoxines zijn secundaire metabolieten die worden geproduceerd door de schimmelsoorten Aspergillus flavus, parasiticus en nomius. Deze schimmels komen voor in vochtige tropische gebieden. Aflatoxines zijn zeer giftig, zelfs in lage concentraties. Bovendien behoren zij tot de sterkste in de natuur voorkomende carcinogene stoffen.
Aflatoxines kunnen in veel verschillende voedingsmiddelen aanwezig zijn. De meest relevante aflatoxine-types zijn de volgende:
Dit is het meest voorkomende en meest toxische type aflatoxine. Het verschijnt in bijna alle gevallen samen met aflatoxine B2, G1 en G2. Het wordt algemeen gevonden in mais, pinda’s, paranoten, katoenzaad en pistachenoten. Maar ook andere voedingsmiddelen, zoals rijst, gierst, amandelen, cashewnoten, pepers, koffie, specerijen, oliezaden en gedroogde vruchten, kunnen zijn aangetast.
Dit type aflatoxine wordt geproduceerd als metaboliet van aflatoxine B1 wanneer melkproducerende koeien besmet voeder eten. Het wordt uitgescheiden met de melk en het kan ook aanwezig zijn in kaas en andere zuivelproducten. Omdat aflatoxine M1 relatief stabiel is ten aanzien van het pasteurisatieproces, is niet alleen een uitgebreide routinecontrole van de te verwerken grondstoffen vereist, maar ook van de eindproducten.
Om de consumenten te beschermen tegen de schadelijke effecten van aflatoxines, hebben veel landen grenswaarden gespecificeerd. Voedingsmiddelen die deze maximum toegelaten niveaus overschrijden, mogen niet op de markt worden gebracht. Volgens verordening nr. 1881/2006 is de grenswaarde in die EU 4 µg/kg (totaal aflatoxinegehalte). Om ervoor te zorgen dat de geproduceerde voedingsmiddelen deze grenswaarde niet overschrijden, zijn regelmatige analyses noodzakelijk.
