Seafood
Van viskwekerij tot visverwerking moet seafood uitgebreid worden getest om veilige voeding van hoge kwaliteit te verkrijgen.

Antibiotica, hormonen en anabolen
Hormonen en anabolen zoals methyltestosteron kunnen worden gebruikt voor sekseomkering bij vissen om snelgroeiende geheel mannelijke populaties te verkrijgen. Residuen van deze stoffen kunnen gezondheidsrisico’s voor consumenten met zich meebrengen. Om deze reden is het gebruik van hormonen en anabolen in de aquacultuur in de meeste landen volledig verboden, met uitzonderingen voor veterinaire doeleinden. Residuen in visserij- en aquacultuurproducten kunnen ook worden veroorzaakt door onjuist of illegaal gebruik van antibiotica, wat gezondheidsrisico’s voor consumenten met zich meebrengt. Bovendien kan het onjuiste gebruik van antibiotica bijdragen aan multiresistentie van pathogene bacteriën.
Mycotoxines
Op planten gebaseerd diervoeder voor de aquacultuur heeft een hoog besmettingsrisico voor mycotoxines, in het bijzonder in landen met vochtige tropische klimaten. Mycotoxines zijn toxische secundaire metabolieten die door schimmels worden geproduceerd en zich in diverse landbouwproducten kunnen ophopen. Mycotoxines hebben ongewenste effecten op levende vis, zoals een slechte groeisnelheid, een geringe toename van het lichaamsgewicht en hoge sterfte, afhankelijk van de vissoort en de mycotoxine. Daarom is een goede risicobepaling belangrijk om de blootstelling van aquaculturen aan mycotoxines te minimaliseren en economische verliezen te vermijden.
Pathogenen, bederforganismen, bacteriële toxines en virussen
Visserijproducten zijn een gunstige omgeving voor bacteriën zoals Listeria, Salmonella, Vibrio of Clostridium, die ernstige door voeding overgedragen ziekten kunnen veroorzaken. Ook toxines, gisten en virussen kunnen in visserijproducten aanwezig zijn; met name mosselen lopen het risico van een Norovirus-besmetting. De monitoring van pathogenen in de gehele productieketen is daarom cruciaal om de bescherming van de consument en de stabiliteit van het product te waarborgen.
Identificatie van vissoorten
Vis moet worden geëtiketteerd met de commerciële aanduiding en de wetenschappelijke naam van de soort, volgens EU-verordening 1379/2013 over een gemeenschappelijke marktregulering voor visserij- en aquacultuurproducten. De verordening stelt ook dat de nationale autoriteiten volledig gebruik moeten maken van de beschikbare technologie, met inbegrip van het testen van DNA, met de doelstelling de consument te beschermen. Om correcte etikettering te waarborgen en financiële schade te vermijden, kunnen zowel ondernemingen als overheidsinstanties vertrouwen op de zeer gevoelige en specifieke real-time PCR-kits die door R-Biopharm worden aangeboden.
Zuren en andere bestanddelen
Organische zuren hebben invloed op de groeisnelheid van pathogene bacteriën in voeding. Melkzuur en acetaat worden wijdverbreid gebruikt als conserveermiddelen en antioxidantia in vis, terwijl sulfiet in het bijzonder wordt gebruikt als conserveermiddel in garnalen. Als de conserveermiddelen in de vis worden geïnjecteerd, is de concentratie precies bekend. Maar als de vis in een oplossing wordt gedompeld, is het noodzakelijk de concentratie in de weefsels te controleren. Bovendien kunnen van nature voorkomende organische zuren als melkzuur een rol spelen als ze in de bacteriële flora aanwezig zijn. Aangezien er wettelijke grenzen zijn afhankelijk van het land, moet de concentratie van zuren en andere conserveermiddelen in het eindproduct worden gecontroleerd.
Histamine
Histamine wordt tijdens de opslag in vis geproduceerd en kan oplopen tot niveaus van meer dan 1000 mg/kg. Verscheidene landen hebben maximumtolerantieniveaus voor histamine ingesteld omdat mensen er ziek van kunnen worden (aandoening met de naam ‘scombroïdvisvergiftiging’). De grenswaarde voor vis en visserijproducten ligt tussen 50 en 200 mg/kg, afhankelijk van de vissoort. Soorten die hoge niveaus histamine bevatten zijn bijvoorbeeld tonijn, makreel, sardines en ansjovis. Vis van goede kwaliteit mag niet meer dan 10 mg/kg histamine bevatten.
