Dranken
Wanneer vruchtensappen, alcoholische dranken, drinkwater of andere dranken worden geproduceerd, moeten er veel stappen worden gecontroleerd en gemonitord om veilige producten van hoge kwaliteit te verkrijgen.
R-Biopharm testkits kunnen gedurende de hele drankproductieketen worden toegepast: van grondstoffen tot tussenproducten tot eindproducten, van de inspectie van binnenkomende goederen tot monitoring van de hygiëne en uiteindelijk tot de productanalyse voor de juiste etikettering. Ons uitgebreide portfolio van verschillende testformats kan worden gebruikt voor de analyse van vruchtensappen en -concentraten, alcoholische dranken (bijv. wijn, bier, sterke drank), drinkwater en niet-zuiveldranken (bijv. sojamelk, amandelmelk).
Bederf van drank
Bederforganismen zijn een belangrijk probleem, speciaal voor de drankensector. Contaminations with spoilage bacteria and yeasts such as Lactobacillus brevis or Saccharomyces diastaticus can significantly affect product quality and taste (e.g. turbidity, off-flavors), and as a consequence, can have severe financial impact. Voor snelle en specifieke screening en detectie van microbiologische bederfparameters in dranken, is bij ons een brede productlijn van qPCR-kits verkrijgbaar.
Zuren, suikers, alcoholen en additieven
De kwaliteit van wijn en bier is gebaseerd op verscheidene parameters. Door kritieke parameters te testen zoals citroenzuur, appelzuur, azijnzuur, ascorbinezuur, melkzuur, glucose, fructose, sucrose, ijzer of ethanol tijdens de productie, kunnen er corrigerende maatregelen worden genomen voor een maximale opbrengst en zo weinig mogelijk afval. Veel enzymatische methoden zijn gevalideerd door internationale organisaties zoals het OIV (International Wine Office), de EU en de AOAC.
Allergenen
Allergene ingrediënten zoals gluten, lactose, soja of noten moeten in de meeste landen op het etiket worden vermeld. Toch komt onbedoelde besmetting tijdens opslag en productie van dranken heel veel voor. Bovendien kunnen klarende stoffen zoals melkeiwit (caseïne), ei (ovalbumine) of lysozym die gebruikt worden in wijn, in het voltooide product achterblijven, wat op de etikettering niet mag ontbreken. Rode wijn bevat ook hoge histamineconcentraties wat problematisch kan zijn voor allergische personen. Bier met glutenvrije etikettering moet op gluten worden getest om de consumenten te beschermen.
Vitaminen
Veel dranken, in het bijzonder vruchtensappen, worden verrijkt met vitaminen. Sapverwerkingsbedrijven hebben accurate gegevens nodig over de concentratie van toegevoegde vitaminen, niet alleen om te voldoen aan de wettelijke vereisten en de eisen van de consument voor de etikettering van de verpakking, maar ook om de vitaminedosering tijdens de productie nauwlettend te controleren. De concentratie vitamine C kan tijdens de opslag met wel 16% afnemen. Toch moet het vitaminegehalte in het product tot het eind van de aangegeven houdbaarheidstermijn overeenkomen met de vermelding op het verpakkingsetiket.
Mycotoxines
Granen en vruchten kunnen besmet zijn met mycotoxines (toxische metabolieten van schimmels) en moeten daarom worden getest voordat ze in de drankproductie worden gebruikt. Het mycotoxine ochratoxine A wordt typisch gevonden in wijn, terwijl aflatoxine, fumonisine en vomitoxine vaak in bier worden aangetroffen. Patuline kan aanwezig zijn in appelsap en appellikeuren. Vanwege de frequente aanwezigheid van mycotoxines en de ernstige toxische effecten ervan, hebben veel landen maximumniveaus ingesteld, bijvoorbeeld 2 μg/kg ochratoxine A in wijn in de Europese Unie.
