Sinds het paardenvleesschandaal is de bewustwording van onrechtmatige voedingsmiddelvervanging en andere voedselfraude sterk toegenomen.
De variërende prijzen en verkrijgbaarheid van voedingsmiddelen van verschillende oorsprong zorgen voor verleidingen om voedingsbestanddelen onjuist te etiketteren, zowel wat betreft kwaliteit als kwantiteit. Paardenvlees kan bijvoorbeeld worden geëtiketteerd als rundvlees. Dergelijke productfraudes kunnen erg specifiek gedetecteerd en relatief gekwantificeerd worden door middel van real-time PCR (met bijvoorbeeld procentuele waarden van de respectievelijke diersoorten in relatie tot de totale hoeveelheid vlees).
Bovendien zijn mensen geïnteresseerd in de diersoort om religieuze redenen (halal en koosjere voeding). Religieus gemotiveerde inspecties, in het bijzonder van varkensvlees in vleesproducten of bewerkte voedingsmiddelen, hebben geen enkele technische drempelwaarde. Dit betekent dat zuiver kwalitatieve en bijzonder gevoelige testen vereist zijn, speciaal voor detectie van de aanwezigheid van varkensvlees. Real-time PCR is een voorkeursmethode. De effectieve gevoeligheid van toegepaste real-time PCR-testen is gebaseerd op het bestaan van intact DNA. Dit maakt de sensitieve detectie in sterk bewerkte voedingsmiddelen zoals gelatine moeilijk.
Maar er wordt niet alleen met vleesproducten gefraudeerd. Voedselfraude is ook wijdverbreid bij vis en zuivelproducten. Klik op een van de volgende categorieën voor meer informatie over fraude met verschillende voedingsmiddelen.
