Frutos secos
La alergia a los frutos secos es una de las alergias alimentarias más frecuentes. Aproximadamente un 1 % de la población sufre reacciones alérgicas a los frutos secos.
El término “frutos secos” hace referencia a los frutos secos de árbol, y no incluye a los cacahuetes (una legumbre que se cultiva en el subsuelo). No todos los tipos de frutos secos tienen el mismo nivel de alergenicidad. Por ejemplo, la alergia a la avellana está particularmente extendida, mientras que las almendras o el coco se suelen tolerar mejor. Una prueba de alergia proporcionará información detallada sobre los frutos secos que una persona alérgica puede consumir o no.
Los frutos secos son uno de los alérgenos alimentarios más importantes, por lo que se deben especificar como ingrediente en los envases de acuerdo con la Directiva de la UE 2007/68/CE. Sin embargo, pueden transferirse a los alimentos accidentalmente debido a la contaminación cruzada. La contaminación accidental puede tener lugar en los centros de producción independientemente de que procesen alimentos con o sin frutos secos. Por ejemplo, durante la producción de productos de pastelería, productos panificados, chocolate, galletas, cereales o helado. Algunos fabricantes se protegen incluyendo en los productos el siguiente aviso legal: “Puede contener trazas de frutos secos.”
Para las personas alérgicas es importante poder confiar en el hecho de que el producto alimentario está realmente libre de frutos secos si así se declara en la etiqueta. Por lo tanto, es preciso un examen detenido tanto de las áreas de producción como de los productos finales.
