DON (vomitoxina)
El deoxinivalenol (DON, también conocido como vomitoxina) pertenece al grupo tricoteceno de micotoxinas y lo forman los hongos del género Fusarium. El deoxinivalenol suele aparecer en productos de origen vegetal, especialmente en cereales como trigo, maíz, cebada, avena y centeno.
Se conocen más de 150 tricotecenos; las micotoxinas deoxinivalenol, 3-acetil- y 15-acetil-deoxinivalenol son las toxinas más frecuentes en Europa y Norteamérica. Las concentraciones de la toxina en el trigo, maíz y arroz a menudo se encuentran dentro del rango de ppm. Debido a su elevada citotoxicidad y a sus propiedades inmunosupresoras, estas toxinas suponen un riesgo para la salud humana y animal. Los animales contaminados con DON presentan síntomas como rechazo a los alimentos y vómitos o diarrea, lo que provoca deficiencias de crecimiento. En los seres humanos, la intoxicación por pescado con DON provoca dolor abdominal, mareo, dolor de cabeza, irritación de garganta, nauseas, vómitos, diarrea y pérdida de sangre con las heces. El DON es compuesto que mantiene una alta estabilidad durante el almacenamiento, molienda, procesamiento y cocinado del alimento y no se degrada con las temperaturas elevadas.
Los niveles recomendados de la FDA estadounidense para DON estipulan 1 ppm en productos de trigo acabado para consumo humano y 5 ppm en cereales y sus productos derivados para ganado porcino y otros animales.
