Intended use

RIDASCREEN®FAST Sesame is a sandwich enzyme immunoassay for the quantitative analysis of sesame or parts of sesame (as ingredient components or contamination) in instant soup, chocolate dessert, bakery products and crackers.

General Information

Sesame seeds (Sesamum indicum) are used as raw or roasted ingredients in many different foods. The allergen can be present as an ingredient or as a contamination in raw and cooked products. According to the regulation (EU) No. 1169/2011 , Sesam and products thereof must be declared on food labels. Similar regulations exist e.g. in Canada and Australia.
Sesame seed food allergy is an increasingly recognized health burden, the symptoms vary from allergic eczema to life threatening anaphylactic reactions. Until now, seven different proteins of sesame were identified as allergens (Ses i 1-7). The only effective treatment to protect sensitized patients from allergic symptoms is a strict avoidance of sesame containing food.
