Produits laitiers
De la production de lait au produit final, nombreuses sont les étapes qui doivent être contrôlées et surveillées afin d’obtenir des produits sûrs et de haute qualité.
Les kits de test R-Biopharm peuvent être utilisés tout au long de la chaîne de production des produits laitiers : des matières premières aux produits finis en passant par les étapes intermédiaires, de l’inspection des marchandises reçues à la surveillance de l’hygiène jusqu’à l’analyse des produits en vue de leur étiquetage approprié. Les différents formats de test de notre gamme peuvent être utilisés pour analyser le lait frais et le lait en poudre, le fromage, le yaourt et bien d’autres produits laitiers.
Surveillance de l’hygiène
Les produits laitiers contiennent différents micro-organismes. Dans certains cas, les bactéries sont souhaitables ou même nécessaires (pour fabriquer du fromage, par exemple). Toutefois, certains micro-organismes sont pathogènes et peuvent provoquer des maladies d’origine alimentaire ; c’est le cas de Salmonella, Listeria, E. coli, Staphylococcus aureus ou de Bacillus cereus. Les organismes généralement responsables de l’altération doivent également être surveillés afin de réduire les pertes pendant la production et assurer la stabilité du produit jusqu’à la fin de la durée de conservation déclarée.
Mycotoxines
Les femelles allaitantes nourries avec des aliments contaminés par l’aflatoxine peuvent sécréter de l’aflatoxine M1, potentiellement toxique, dans leur lait. Les taux d’aflatoxine M1 étant relativement stables grâce aux traitements thermiques et à la transformation du lait, il est recommandé de vérifier le lait cru ainsi que les produits finaux.
Antibiotiques
En dehors du risque sanitaire auquel le consommateur peut être exposé, les résidus d’antibiotiques impliquent un risque économique. En effet, ils peuvent inhiber les processus biotechnologiques auxquels participent les micro-organismes. Le règlement (UE) n° 37/2010 de la Commission fixe les niveaux admissibles d’antibiotiques dans les denrées alimentaires d’origine animale. Dans le cas du lait, ces niveaux sont de 4 ppb de pénicilline, 100 ppb de tétracycline et tolérance zéro pour le chloramphénicol.
Fraude alimentaire
Le lait fait partie des aliments les plus fréquemment adultérés. Grâce à leur sensibilité, nos kits de test permettent d’identifier les produits laitiers altérés pour des motifs économiques.
Allergènes
Pour les millions de personnes intolérantes au lactose, la prudence est de mise en termes de consommation de lait et de produits laitiers. Dans la plupart des pays, il est obligatoire d’étiqueter les ingrédients susceptibles de provoquer des allergies ou des intolérances. Cependant, la contamination involontaire est très fréquente. C’est pourquoi il est recommandé aux fabricants de tester leurs produits afin d’en assurer le bon étiquetage et d’éviter les rappels.
Sucres, acides et autres composants
L’analyse enzymatique est un outil précieux qui permet d’identifier de nombreuses substances présentes dans le lait et les produits fromagers, tels que le lactose, l’acide lactique, l’acide glutamique, l’ammoniac, le nitrate ou l’éthanol. De nombreuses méthodes enzymatiques ont été validées par des organismes internationaux tels que l’AOAC (méthode officielle 984.15 relative au lactose dans le lait, p.ex.), la Fédération internationale du lait (méthode IDF 34C relative à l’acide citrique dans le fromage et le lait, p.ex.) et ISO (norme ISO 11285 relative au lactulose dans le lait, p.ex.).
Vitamines
Les produits laitiers sont souvent enrichis en vitamines pour assurer des apports suffisants à la population. Les fabricants doivent s’assurer que la teneur en vitamines naturelles et ajoutées corresponde à ce qui est indiqué sur l’emballage jusqu’à la fin de la durée de conservation déclarée.
