R-Biopharm christmas recipe
For those still looking for a delicious side dish for this year’s Christmas menu, our colleague Claire from R-Biopharm Rhone has just the thing: Christmas red cabbage with apple, orange and raisins. Fruity-sweet and softly cooked in the oven, the side dish will be the secret star of the Christmas dinner.
Ingredients:
- 2 tbsp butter
- 1 medium red onion
- 1 cooking apple
- 1 orange
- 75 g raisins
- 1 medium red cabbage
- 3 tbsp cider vinegar
- 1 tbsp brown sugar
- 1 tsp salt
- 3 cloves
- 35 ml port (optional)
Preparation:
- Melt the butter in a baking tray and fry the chopped onion until tender (don’t let it brown).
- Add the chopped apple, orange juice and zest, raisins, chopped cabbage and other ingredients. Mix well.
- Add 100 ml of water and cover tray with foil.
- Cook in oven at 150°C for 30 minutes until the cabbage is soft, sweet and sour. Check the seasoning.
This dish can also be cooked in advance and frozen.
