In recent years, the number of people with food allergies has risen continuously. Therefore, the importance of allergen-free foods will continue to increase in future. To ensure consumer safety and brand protection by reducing the number of product recalls, a robust allergen management with additional testing for allergen residues is necessary.

Allergen management requires an integrated approach, including preventative and monitoring measures, as well as effective communication of allergen information throughout the supply chain. Good Manufacturing Practice (GMP) requires the development and implementation of a prevention plan in order to exclude critical allergens in the end product. Furthermore, so-called HACCP (Hazard Analysis and Critical Control Points) plans analyze potential hazards, identify critical control points and introduces additional measures. If the additional measures from GMP and HACCP do not completely rule out the risk of cross-contamination of an allergen, the product must be labeled accordingly.
