Fruits de mer
De la pisciculture à la transformation du poisson, les produits de la mer doivent subir des tests approfondis afin d’obtenir des produits sûrs et de haute qualité.
Les kits de test R-Biopharm peuvent être utilisés tout au long de la chaîne de production : des matières premières aux produits finis, de l’inspection des marchandises reçues à la surveillance de l’hygiène jusqu’à l’analyse des produits en vue de leur étiquetage approprié. Les différents formats de tests de notre gamme peuvent être utilisés pour analyser le poisson cru, le poisson en conserve et les fruits de mer tels que les crevettes et les moules.
Antibiotiques, hormones et anabolisants
Des hormones et des anabolisants, comme la méthyltestostérone, sont parfois utilisés pour modifier le sexe des poissons afin d’obtenir des populations exclusivement de sexe masculin dont la croissance est rapide. Les résidus de ces substances peuvent induire des risques pour la santé des consommateurs. Telle est la raison pour laquelle l’utilisation d’hormones et d’anabolisants est strictement interdite en aquaculture dans la plupart des pays, exception faite de leur utilisation vétérinaire. L’utilisation incorrecte ou illégale d’antibiotiques en aquaculture peut aussi entraîner la présence de résidus de médicaments dans les produits de la pêche et de l’aquaculture, induisant des risques pour la santé des consommateurs. De plus, l’utilisation inappropriée d’antibiotiques contribue à la multirésistance des bactéries pathogènes.
Mycotoxines
Les aliments aquacoles à base de plantes présentent un risque élevé de contamination par les mycotoxines, en particulier dans les climats tropicaux humides. Les mycotoxines sont des métabolites secondaires toxiques produits par les moisissures pouvant s’accumuler dans divers produits agricoles. Leurs effets sont néfastes sur les populations de poissons (faible taux de croissance, faible gain de poids et mortalité élevée) selon les espèces de poissons et la mycotoxine concernée. Il est donc essentiel de bien évaluer les risques afin de minimiser l’exposition des aquacultures aux mycotoxines et d’éviter des pertes économiques.
Agents pathogènes, organismes d’altération, toxines bactériennes et virus
Les propriétés des produits de la pêche sont favorables aux bactéries telles que Listeria, Salmonella, Vibrio ou Clostridium, qui peuvent provoquer de graves maladies d’origine alimentaire. Les produits de la pêche peuvent également contenir des toxines, des levures et des virus, notamment les moules, qui sont à risque de contamination par des norovirus. La surveillance des agents pathogènes tout au long de la chaîne de production est donc cruciale pour assurer la protection du consommateur et la stabilité du produit.
Identification des espèces de poissons
Conformément au règlement (UE) n° 1379/2013 portant organisation commune des marchés dans le secteur des produits de la pêche et de l’aquaculture, le poisson doit être étiqueté sous la désignation commerciale de l’espèce et son nom scientifique. Le règlement stipule également que, « dans un souci de protection du consommateur, les autorités nationales compétentes […] devraient utiliser pleinement les technologies disponibles, notamment les tests ADN ». Afin de garantir un étiquetage adéquat et d’éviter les préjudices financiers, les entreprises et les agences gouvernementales peuvent s’appuyer sur la sensibilité et la spécificité performantes des kits de PCR en temps réel proposés par R-Biopharm.
Acides et autres composants
Les acides organiques ont une incidence sur le taux de croissance des bactéries pathogènes dans les aliments. L’acide lactique et l’acétate sont largement utilisés comme conservateurs et antioxydants dans les poissons, tandis que le sulfite est particulièrement utilisé comme conservateur dans les crevettes. La teneur en conservateurs est connue de façon précise lorsque ces derniers sont injectés dans le poisson. En revanche, si le poisson est immergé dans une solution, il est nécessaire de vérifier la concentration dans les tissus. Les acides organiques naturels tels que l’acide lactique peuvent également jouer un rôle s’ils sont présents dans la flore bactérienne. Des limites légales existant selon les pays, la teneur en acides et autres conservateurs doit être vérifiée dans le produit final.
Histamine
L’histamine se forme dans le poisson pendant son stockage et peut dépasser 1000 mg/kg. Dans plusieurs pays, l’histamine fait l’objet de limites de tolérance en raison de son risque potentiel pour la santé humaine (communément appelé « scombrotoxisme » ou intoxication histaminique). Pour le poisson et les produits de la pêche, la valeur limite se situe entre 50 et 200 mg/kg selon les espèces. Le thon, le maquereau, les sardines et les anchois figurent parmi les espèces contenant des niveaux élevés d’histamine. Les poissons de bonne qualité doivent contenir moins de 10 mg/kg d’histamine.
