Résidus et contaminants
Lorsque les animaux destinés à la consommation sont traités avec des antibiotiques, des hormones ou des anabolisants, des résidus de médicaments subsistent dans leur viande et dans leur lait. Ces résidus peuvent induire des risques pour la santé des consommateurs.
« Les résidus sont ce qui reste des substances volontairement utilisées lors de la production d’aliments. » (Source : BFR). Ces résidus englobent les médicaments vétérinaires et les pesticides. Afin de protéger les consommateurs, nombreux sont les pays qui ont fixé des limites maximales de résidus (LMR) et mis en place des programmes de surveillance.
Notre gamme de produits comprend différents types de tests, tels que les tests immunoenzymatiques (ELISA), des tests d’inhibition bactériologique et des colonnes d’immunoaffinité pour la détection d’hormones, d’anabolisants, d’antibiotiques et autres résidus de médicaments dans les différentes matrices.
Antibiotiques
Les antibiotiques sont des métabolites naturellement produits par des champignons ou des bactéries. Certaines substances n’existant pas dans la nature mais également appelées antibiotiques sont obtenues au moyen de biotechnologies modernes et de synthèse chimique. Les antibiotiques sont capables de détruire les micro-organismes ou d’inhiber leur croissance. En médecine humaine et vétérinaire, les antibiotiques sont donc utilisés comme médicaments pour traiter les maladies bactériennes.
Hormones et anabolisants
La présence de résidus d’hormones et de stéroïdes anabolisants dans les aliments tels que la viande ou le lait constitue un risque potentiel pour la santé des consommateurs. Les hormones sont des messagers biochimiques endogènes qui sont transportés par le sang vers les organes cibles. En plus des hormones sexuelles naturelles, des stéroïdes synthétiques et des bêta-agonistes peuvent être utilisés dans l’élevage du bétail pour améliorer le gain de poids moyen et le rapport graisse/viande.
Autres médicaments vétérinaires
En plus des antibiotiques et des anabolisants, d’autres médicaments vétérinaires sont parfois utilisés pour traiter les animaux. Ils peuvent également laisser des résidus dans les aliments. Parmi ces médicaments, citons, par exemple, les fongicides (utilisés pour détruire ou inhiber les champignons), les vermifuges (utilisés pour traiter les infections parasitaires), les corticostéroïdes (hormones stéroïdes synthétiques prenant en charge différentes fonctions physiologiques), les tranquillisants (utilisés pour éviter les troubles liés au transport et le stress des porcs) et les coccidiostatiques (utilisés pour traiter ou prévenir la coccidiose, une maladie parasitaire).
Contaminants chimiques
Pouvant provenir de différentes sources, la contamination chimique des aliments peut poser des problèmes de santé. La migration des contaminants contenus dans les matériaux d’emballage est une source importante de contamination. Citons, par exemple, le bisphénol A (BPA) qui est une substance utilisée dans la fabrication de polycarbonate. Le BPA contenu dans les bouteilles en plastique ou dans les emballages en plastique peut migrer dans les aliments. La législation européenne a donc défini une limite de migration spécifique (LMS) pour le BPA.
