Prodotti ittici

Dall’allevamento fino al momento della lavorazione, i prodotti ittici devono essere sottoposti a controlli su larga scala perché ne siano garantite sicurezza ed elevata qualità.

I kit R-Biopharm sono utilizzabili lungo tutta la catena produttiva, dal controllo delle merci in entrata al monitoraggio dello stato d’igiene fino al prodotto finale per una corretta etichettatura. Il nostro vasto portafoglio di test in vari formati è utilizzabile per analizzare pesce fresco, in scatola e altri prodotti ittici come gamberetti e mitili.

Antibiotici, ormoni e anabolizzanti

Ormoni e anabolizzanti come il metiltestosterone possono essere impiegati per l’inversione del sesso al fine di ottenere popolazioni di soli maschi ad accrescimento rapido. I residui di queste sostanze possono però comportare rischi per la salute dei consumatori; l’utilizzo di ormoni e anabolizzanti in acquacoltura è assolutamente proibito in molti Paesi, salvo che per scopi veterinari. Residui nei prodotti della pesca e dell’acquacoltura possono derivare anche da un uso scorretto o illegale degli antibiotici, con possibile rischio per la salute del consumatore. L’uso inappropriato degli antibiotici inoltre contribuisce alla multiresistenza dei batteri patogeni.

Micotossine

I mangimi per acquacoltura a base vegetale presentano un elevato rischio di contaminazione da micotossine, specialmente nei Paesi a clima tropicale umido. Le micotossine sono metaboliti secondari tossici prodotti dalle muffe e possono accumularsi in vari prodotti agricoli. Le micotossine hanno effetti negativi nei pesci allevati, quali scarso accrescimento, incremento ponderale ridotto ed elevata mortalità, a seconda della specie ittica e della micotossina. Un’idonea valutazione del rischio è fondamentale per minimizzare l’esposizione delle acquacolture alle micotossine ed evitare perdite economiche.

Organismi patogeni, organismi inquinanti, tossine batteriche e virus

I prodotti della pesca costituiscono un ambiente favorevole allo sviluppo di batteri come ListeriaSalmonella, vibrione  e Clostridium, che possono causare gravi malattie di origine alimentare. Anche tossine, lieviti e virus possono essere presenti nei prodotti della pesca; i mitili in particolare sono soggetti a contaminazione da norovirus. Il monitoraggio dei patogeni lungo l’intera catena produttiva è quindi importantissimo per garantire la tutela del consumatore e la stabilità del prodotto.

Identificazione della specie ittica

Il pesce dev’essere indicato in etichetta con il nome commerciale della specie e con il nome scientifico, in accordo con il Regolamento UE 1379/2013 relativo all’organizzazione comune dei mercati nel settore dei prodotti della pesca e dell’acquacoltura. Il regolamento stabilisce inoltre che, ai fini della tutela del consumatore, le autorità nazionali devono fare pieno uso delle tecnologie disponibili, ivi compreso il test del DNA. Per garantire la corretta etichettatura ed evitare danni finanziari, tanto le aziende quanto le agenzie governative possono contare sui kit di real-time PCR altamente sensibili e specifici offerti da R-Biopharm.

Acidi e altri costituenti

Gli acidi organici influenzano la velocità di crescita dei batteri patogeni nei cibi. L’acido lattico e l’acetato sono largamente usati come conservanti e antiossidanti nel pesce, mentre i solfiti sono il conservante d’elezione per i gamberetti. Se i conservanti sono iniettati nel pesce, la concentrazione è nota con esattezza, ma se il pesce viene immerso in una soluzione, è necessario controllarne la concentrazione nei tessuti. Inoltre, acidi organici presenti naturalmente come l’acido lattico possono avere una loro influenza, se presenti nella flora batterica. Dal momento che i limiti di legge variano da una nazione all’altra, occorre controllare la concentrazione di acidi e altri conservanti nel prodotto finale.

Istamina

L’istamina si forma nel pesce durante la conservazione e può superare livelli di 1000 mg/kg. Molti Paesi hanno stabilito livelli massimi di tolleranza per l’istamina per la sua capacità di causare nell’uomo una patologia nota come “sindrome sgombroide”. Il valore limite per il pesce e i prodotti della pesca varia da 50 e 200 mg/kg a seconda della specie. Specie contenenti alti livelli di istamina sono il tonno, lo sgombro, le sardine e le acciughe. Il pesce di buona qualità deve contenere meno di 10 mg/kg di istamina.
