Dekkera bruxellensis (Brettanomyces bruxellensis anamorfo) è un lievito di grande rilevanza per l’industria vitivinicola perché in grado di produrre grandi quantità di fenoli volatili (4-etilfenolo e 4-etilguaiacolo), che possono avere un impatto negativo sul sapore dei prodotti finiti. I lieviti della specie Dekkera bruxellensis producono etilfenoli in grado di rovinare il sapore del vino e causare quindi notevoli danni economici ai produttori. Alcune autorità considerano i lieviti “brett” come responsabili del 90% delle istanze di degradazione dei vini rossi di qualità. Per contro, nei processi di produzione della birra (in particolare le birre artigianali e belghe), Dekkera bruxellensis non viene considerato un contaminante ma un esaltatore di sapidità.

Durante la produzione del vino, la fermentazione malolattica viene svolta dai batteri del genere Lactobacillus; la presenza del batterio specializzato Oenococcus oeni facilita il processo di trasformazione dell’acido malico in acido lattico. In alcuni tipi di vino, però, la presenza di Oenococcus oeni può avere effetti negativi.

Pediococcus è un genere di batteri dell’acido lattico gram-positivi che possono causare degradazione nel vino e nella birra. Alcuni tipi di birra devono però il proprio sapore alla presenza di questi batteri.

Pichia è il nome di un genere di lieviti saccaromicetali, utilizzati nel processo di fermentazione del vino ma potenzialmente degradanti se presenti in grandi quantità. Possono inoltre causare torbidità e sapori sgradevoli nella birra.

Saccharomyces è un genere di funghi che include molte specie di lieviti. Tra le specie più note si conta Saccharomyces cerevisiae, utilizzato nella produzione di birra, vino e pane. Saccharomyces diastaticus è considerato un microorganismo di degradazione dall’industria del vino e della birra.
