Intended use

RIDASCREEN® Walnut (Art. No. R6601) is a sandwich enzyme immunoassay for the quantitative analysis of raw and roasted walnut or walnut protein in food. Due to the large number of different food products, the following samples were examined as representative for different food product categories within the scope of the test development: cookies, chocolate, ice cream and breakfast cereals.

General Information

The walnut (Juglans regia) is one of the most popular tree nuts in the world. Walnuts are very common ingredients in chocolate products and are also consumed as snacks and in baked goods such as cookies. Furthermore, they are used as an additive for ice cream, dressings and salads.

Walnuts are one of the eight foods that are the most common cause of food allergies. Eating less than one milligram walnut protein can trigger allergic reactions in sensitized individuals. The main danger for sensitized individuals is the contamination of walnuts in food (e.g. traces of walnuts in chocolate, which should not contain walnuts). Therefore, it is important to test foods that may have been contaminated during the production process for the presence of unintentional walnut traces.

According to Regulation (EU) No. 1169/2011, walnuts and their products must be declared as an allergen on food labels. There are similar regulations in the USA, Canada, Australia and New Zealand, for example.
