Intended use
RIDASCREEN®EASY Mustard is an enzyme immunoassay for the quantitative determination of mustard.
General Information
Mustard belongs to the 14 allergens which must be listed in the EU according to Regulation (EU) No. 1169/2011 and in some other countries on food labels as a food allergy trigger.
Even small traces of allergens in foods may induce allergic reactions in sensitive people. Symptoms include skin rash, swelling, shortness of breath, asthma, stomach pain, nausea and vomiting and even anaphylactic shock. Those affected must strictly avoid all foods containing mustard proteins. Some people with a mustard allergy have a cross-allergy to other foods such as fruit or nuts.
There are considerable deficiencies in labeling and quality assurance, particularly with the allergen mustard. For example, undeclared traces of mustard are repeatedly found in food during inspections. An important source of danger is cross-contamination during cultivation, processing (dust formation during grinding) or packaging. The allergenic proteins in mustard do not lose their allergenic effect through processing. Therefore, processed samples have been investigated during assay validation of the RIDASCREEN®EASY Mustard, which were already contaminated with mustard prior processing. Hence, in this type of sample (incurred samples), the mustard proteins have passed through significant steps of the food production.
