Mariscos
Desde a criação de peixes até o processamento de frutos do mar, os produtos precisam passar por testes extensivos para garantir que sejam seguros e de alta qualidade.
Os kits de teste da R-Biopharm podem ser aplicados em toda a cadeia de produção: desde as matérias-primas até os produtos finais, desde a inspeção de mercadorias recebidas até o monitoramento da higiene e, finalmente, a análise do produto para rotulagem correta. Nosso grande portfólio de diferentes formatos de teste pode ser utilizado para analisar peixe cru, peixe enlatado e frutos do mar como camarões e mexilhões.
Antibióticos, hormônios e anabolizantes
Hormônios e anabolizantes como o metiltestosterona podem ser usados para reversão sexual em peixes, a fim de obter populações de machos que crescem rapidamente. Resíduos dessas substâncias podem representar riscos para a saúde dos consumidores. Por esse motivo, o uso de hormônios e anabolizantes na aquicultura é totalmente proibido na maioria dos países, com exceções para fins veterinários. Resíduos em produtos pesqueiros e de aquicultura também podem ser causados pelo uso incorreto ou ilegal de antibióticos, que representam riscos à saúde dos consumidores. Além disso, o uso inadequado de antibióticos contribui para a multirresistência de bactérias patogênicas.
Micotoxinas
Rações para aquicultura baseadas em plantas têm um alto risco de contaminação com micotoxinas, especialmente em países com climas tropicais úmidos. Micotoxinas são metabólitos secundários tóxicos produzidos por fungos e podem se acumular em vários produtos agrícolas. As micotoxinas têm efeitos adversos nos estoques de peixes, como taxas de crescimento reduzidas, baixo ganho de peso e alta mortalidade, dependendo da espécie de peixe e da micotoxina. Assim, uma avaliação adequada de risco é importante para minimizar a exposição das aquiculturas às micotoxinas e evitar perdas econômicas.
Patógenos, organismos de deterioração, toxinas bacterianas e vírus
Produtos pesqueiros oferecem um ambiente favorável para bactérias como Listeria, Salmonella, Vibrio ou Clostridium, que podem causar doenças alimentares graves. Toxinas, leveduras e vírus também podem estar presentes nos produtos pesqueiros; especialmente mexilhões correm risco de contaminação por norovírus. Portanto, o monitoramento de patógenos ao longo de toda a cadeia de produção é crucial para garantir a proteção do consumidor e a estabilidade do produto.
Identificação de espécies de peixes
Os peixes devem ser rotulados com a designação comercial da espécie e seu nome científico, de acordo com o Regulamento da UE 1379/2013 sobre a organização comum dos mercados de produtos pesqueiros e de aquicultura. O regulamento também estabelece que, para proteção do consumidor, as autoridades nacionais devem fazer pleno uso da tecnologia disponível, incluindo testes de DNA. Para garantir a rotulagem correta e evitar danos financeiros, empresas e agências governamentais podem contar com os kits de PCR em tempo real altamente sensíveis e específicos oferecidos pela R-Biopharm.
Ácidos e outros constituintes
Ácidos orgânicos afetam a taxa de crescimento de bactérias patogênicas nos alimentos. O ácido láctico e o acetato são amplamente usados como conservantes e antioxidantes em peixes, enquanto o sulfito é particularmente utilizado como conservante em camarões. Se os conservantes são injetados no peixe, a concentração é conhecida com precisão. No entanto, se o peixe é imerso em uma solução, é necessário verificar a concentração nos tecidos. Além disso, ácidos orgânicos naturalmente presentes, como o ácido láctico, podem desempenhar um papel se estiverem presentes na flora bacteriana. Como existem limites legais dependendo do país, a concentração de ácidos e outros conservantes deve ser verificada no produto final.
Histamina
A histamina é produzida em peixes durante o armazenamento e pode ultrapassar níveis de 1000 mg/kg. Vários países estabeleceram limites máximos de tolerância para histamina devido ao seu potencial de causar doenças em humanos (comumente referido como “intoxicação por escômbridos”). O valor limite para peixes e produtos pesqueiros varia entre 50 e 200 mg/kg, dependendo da espécie de peixe. Espécies que contêm altos níveis de histamina são, por exemplo, atum, cavala, sardinha e anchova. Peixes de boa qualidade devem conter menos de 10 mg/kg de histamina.
