Toxinas bacterianas
Algunas especies de bacterias producen toxinas. La ingesta de alimentos contaminados con estas toxinas bacterianas puede provocar casos graves de intoxicación alimentaria.
Las especies de bacterias Staphylococcus aureus, Staphylococcus hyicus, además de Staphylococcus intermedius, generan una o varias proteínas termoestables que se comportan como enterotoxinas (SET). Las SET son la principal causa de las intoxicaciones alimentarias, junto con Salmonellosis y Campylobacteriosis. Por lo general, se asume que es necesaria una población de 5 x 10⁵ células de cepas de S. aureus enterotoxigénico por gramo de alimento para provocar una intoxicación. Sin embargo, otros estudios han demostrado que una cantidad de tan solo 100 – 200 ng de enteroxinas de Staphylococcus puede provocar síntomas de intoxicación alimentaria.
Las intoxicaciones por SET se asocian frecuentemente a alimentos como pasta, productos cárnicos elaborados, jamón, pasteles, productos con carne de pollo, pescados, productos de pescado, leche, productos lácteos, helado, productos derivados del huevo, ensaladas, repostería y relleno para tartas, así como a preparados a partir de dichos productos alimentarios. Las enterotoxinas del grupo serológico A, B, C, D, E son muy importantes.
La cepa enterohemorrágica de Escherichia E. coli (EHEC) es otra especie de bacteria capaz de producir toxinas. Estas bacterias generan las sustancias tóxicas verotoxina o toxina shiga, motivo por el que también se conocen como E. coli productora de verotoxina (VTEC) o E. coli productora de toxina shiga (STEC). La infección por STEC/VTEC es una de las enfermedades bacterianas relacionadas con los alimentos más frecuente y puede ser potencialmente mortal. Entre las fuentes de contaminación cabe destacar la carne cruda y los productos lácteos no pasteurizados.
