Tossine batteriche
Alcune specie di batteri producono tossine che, se ingerite, possono causare intossicazioni alimentari anche gravi.
Le specie Staphylococcus aureus, Staphylococcus hyicus e Staphylococcus intermedius producono diverse proteine termostabili che si comportano come enterotossine (SET); insieme a Salmonella e Campylobacter, sono le cause principali di intossicazione alimentare. Si calcola che sia necessaria una popolazione di 5 x 10⁵ cellule di S. aureus in grado di produrre enterotossine per causare una vera infezione. Altri studi, però, indicano come siano sufficienti 100 – 200 ng di enterotossine stafilococciche per indurre i primi sintomi di intossicazione.
Le intossicazioni da SET sono associate al consumo di pasta, prodotti a base di carne, prosciutto, pasticci, prodotti a base di carne di pollo, pesce e prodotti ittici, latte e prodotti lattiero-caseari, gelati, prodotti a base di uova, insalate, dolciumi, ripieni per torte e preparati di varia origine. Sono di maggiore importanza le enterotossine dei gruppi sierologici A, B, C, D ed E.
Un’altra specie in grado di produrre tossine è il batterio Escherichia coli enteroemorragico (EHEC). I suoi ceppi patogeni prendono il nome dalle sostanze tossiche che producono: verotossina (VTEC) e tossina di Shiga (STEC). Le infezioni da STEC e VTEC sono tra le malattie di origine alimentare più diffuse e possono risultare anche fatali. Le fonti più comuni di contaminazione sono le carne crude e i prodotti lattiero-caseari non pastorizzati.
