Bevande
Ogni fase della produzione di succhi di frutta, alcolici, acqua potabile e altre bevande necessita di controlli accurati per garantire la sicurezza e la qualità dei prodotti.
I kit analitici di R-Biopharm trovano applicazione nel corso dell’intera catena di produzione di una bevanda: dalle materie prime ai prodotti finiti, dall’ispezione delle merci alla verifica delle condizioni igieniche, fino all’analisi per una corretta etichettatura del prodotto. Il nostro ampio portfolio comprende test per l’analisi di succhi di frutta e concentrati, bevande alcoliche come vino, birra e liquori, acqua potabile e bevande non contenenti latte come latte di soia e di mandorla.
Deterioramento delle bevande
Gli organismi responsabili del deterioramento delle bevande sono un problema di enorme entità per l’intero settore. La contaminazione da parte di batteri e lieviti come Lactobacillus brevis o Saccharomyces diastaticus può alterare notevolmente la qualità del prodotto (causando torbidità e sapori sgradevoli) con ripercussioni economiche gravi. Offriamo una vasta gamma di kit qPCR per lo screening e il rilevamento di parametri di deterioramento microbiologico in bevande di ogni tipo.
Acidi, zuccheri, alcoli e additivi
La qualità di vino e birra è stabilita in base a diversi criteri. Grazie all’analisi e rilevazione, durante il processo, di parametri critici quali acido citrico, malico, acetico, ascorbico e lattico, glucosio, fruttosio, saccarosio, ferro ed etanolo, è possibile intervenire per assicurare una produzione migliore possibile sia dal punto di vista della qualità che della quantità. Molti test enzimatici sono stati approvati da organizzazioni internazionali come OIV (Organizzazione internazionale della vigna e del vino), UE e AOAC.
Allergeni
In molti Paesi vige l’obbligo di etichettare ingredienti allergenici come il glutine, il lattosio, la soia o la frutta a guscio. Purtroppo la contaminazione involontaria durante lo stoccaggio o la produzione delle bevande è molto comune. Inoltre, chiarificanti come le proteine del latte (caseina) e delle uova (ovalbumina) o il lisozima, utilizzati nella produzione del vino, possono rimanere nel prodotto finito e devono essere indicati in etichetta. Il vino rosso contiene alti livelli di istamina, che possono essere problematici per i soggetti allergici. Nelle birre etichettate come prive di glutine si deve verificare l’eventuale contenuto di glutine per tutelare il consumatore.
Vitamine
Molte bevande, in particolare i succhi di frutta, sono arricchite con vitamine. Le aziende produttrici devono disporre di dati accurati sulla concentrazione delle vitamine addizionate non solo per rispettare, ai fini dell’etichettatura della confezione, i requisiti normativi e le esigenze dei consumatori, ma anche per controllare attentamente, durante la produzione, il dosaggio della vitamina. La concentrazione della vitamina C può degradarsi fino al 16% durante la conservazione, ma il contenuto di vitamina del prodotto deve corrispondere a quello indicato sulla confezione fino alla data di scadenza dichiarata.
Micotossine
Cereali e frutta possono essere contaminati da micotossine, che sono metaboliti tossici delle muffe, e devono pertanto essere analizzati prima di essere utilizzati nella produzione delle bevande. L’ocratossina A è spesso presente nel vino, mentre l’aflatossina, la fumonisina e la vomitossina sono frequenti nella birra. La patulina può trovarsi in succhi e liquori a base di mela. Data la frequente presenza delle micotossine e la loro notevole tossicità, molti Paesi hanno introdotto livelli massimi di legge. Per esempio, l’Unione europea ha fissato un limite di 2 μg/kg di ocratossina A nel vino.
