Dalla raccolta nei campi fino al prodotto finito, è necessario controllare e monitorare molte fasi della lavorazione per ottenere prodotti sani e di alta qualità.
I kit R-Biopharm sono utilizzabili lungo tutta la catena produttiva, dalle materie prime ai prodotti intermedi fino a quelli finali, dall’ispezione delle merci in entrata fino al monitoraggio dell’igiene e all’analisi del prodotto per la corretta etichettatura. Il nostro vasto portfolio di test in formati diversi consente di analizzare cereali come frumento, mais, avena e riso, oltre a farine, prodotti da forno, miscele per dolci, pasta e molti altri prodotti a base di cereali.
Micotossine
I cereali sono una delle fonti più importanti di micotossine nella catena produttiva di alimenti e mangimi. La loro prevalenza ed elevata tossicità fa sì che molti Paesi impongano livelli massimi alla concentrazione di micotossine negli alimenti. È fondamentale che le aziende produttrici dispongano di metodi di screening affidabili per poter rispettare le normative e assicurare prodotti tossicologicamente sani tanto per l’uomo quanto per gli animali.
Allergeni
In molti Paesi è obbligatorio etichettare gli alimenti che possono causare allergie o intolleranze. Poiché la contaminazione involontaria avviene frequentemente per carryover durante lo stoccaggio o la fase di produzione, le aziende produttrici dovrebbero analizzare sia le materie prime in entrata che i prodotti finiti per garantire un’etichettatura corretta ed evitare richiami di prodotto.
Monitoraggio dello stato d’igiene
Le malattie di origine alimentare sono causate principalmente da microorganismi. Per tutelare al meglio il consumatore è dunque fondamentale controllare l’eventuale presenza di organismi patogeni lungo tutta la catena produttiva. Inoltre è importante monitorare gli organismi inquinanti per contenere le perdite durante la fase produttiva e assicurare la stabilità del prodotto fino alla data di scadenza indicata.
Organismi geneticamente modificati (OGM)
La produzione mondiale di mais, riso e soia geneticamente modificati è in costante aumento. In molti Paesi sono stati introdotti valori soglia per l’etichettatura di prodotti contenenti OGM per garantire la corretta informazione al consumatore sull’applicazione biotecnologica. La rilevazione degli OGM negli alimenti e nei mangimi è essenziale per ottemperare correttamente ai requisiti di etichettatura e tracciabilità.
Zuccheri e altri costituenti
Zuccheri e acidi come l’acido citrico, il sorbitolo o il saccarosio sono spesso aggiunti ai prodotti da forno. Questi costituenti devono essere quantificati per una corretta etichettatura nutrizionale in modo da assicurare una qualità uniforme o la rispondenza ai requisiti di legge. Di largo impiego sono i test enzimatici, perché sono di facile utilizzo e forniscono risultati precisi anche con le matrici complesse.
Vitamins
I prodotti a base di cereali sono spesso arricchiti con vitamine essenziali per assicurarne un apporto sufficiente alla popolazione. Per le aziende è necessario garantire che il contenuto di vitamina addizionata e di vitamina naturale corrispondano a quanto riportato sulla confezione fino alla data di scadenza dichiarata.
Adulterazioni alimentari
Il grano duro (Triticum durum) è la materia prima ideale per la produzione della pasta e la specie di grano più economicamente rilevante. Poiché il suo costo è superiore a quello di altri tipi di grano, molti prodotti a base di cereali risultano modificati dall’aggiunta di grano non duro.
