Residuos y contaminantes
Si los animales destinados a la producción de alimentos se tratan con antibióticos, hormonas o anabolizantes, los residuos farmacológicos pueden permanecer en la carne y la leche. Estos residuos pueden suponer un riesgo para la salud de los consumidores.
“Se considera como residuos a los restos de sustancias utilizadas de forma intencionada durante la producción de alimentos”. (Fuente: BFR) Incluyen pesticidas y fármacos veterinarios. Con el fin de proteger a los consumidores, muchos países han establecido límites máximos de residuos (LMR) y programas de monitorización.
Nuestra gama de productos incluye diversos sistemas de ensayo, como inmunoensayos enzimáticos (ELISA), pruebas de inhibición microbiana y columnas de inmunoafinidad para detección de hormonas, anabólicos, antibióticos y otros residuos farmacológicos en diversas matrices.
Antibióticos
Los antibióticos son metabolitos que se generan de forma natural a partir de hongos o bacterias. Las sustancias no naturales producidas mediante modernos procesos biotecnológicos y síntesis química también se denominan antibióticos. Los antibióticos son capaces de matar microorganismos o inhibir su crecimiento. Por ello, en la medicina humana o veterinaria, los antibióticos se emplean como fármacos para el tratamiento de enfermedades bacterianas.
Hormonas y anabólicos
Los residuos de las hormonas y los esteroides anabólicos en alimentos como la carne o la leche suponen un riesgo potencial de salud para los consumidores. Las hormonas actúan como mensajeros bioquímicos endógenos a través del flujo sanguíneo a los órganos objetivo. Además de las hormonas sexuales naturales, los esteroides y beta-agonistas sintéticos se pueden utilizar en la cría de ganado para mejorar el peso medio y la proporción carne/grasa.
Otros fármacos veterinarios
Además de los antibióticos y anabólicos, los animales se tratan ocasionalmente con otros fármacos veterinarios que también pueden dejar residuos en los alimentos. Estos fármacos incluyen fungicidas (para matar o inhibir hongos), antihelmíntico (para tratar infecciones causadas por gusanos parasitarios), corticoesteroides (hormona esteroidea sintética que ayuda a ciertas funciones fisiológicas), tranquilizantes (para la prevención de enfermedades y síndrome de estrés durante el transporte en los cerdos) y coccidiostáticos (para tratar o prevenir la coccidiosis, una enfermedad parasitaria).
Contaminantes químicos
La contaminación química de los alimentos es un problema de salud que puede originarse desde varias fuentes. Una de las fuentes importantes de contaminación es la transferencia desde el material de envasado. Un ejemplo de ello es el contaminante bisfenol A (BPA), una sustancia utilizada en la producción de plásticos de policarbonato. A través de las botellas o envases de plástico, el BPA puede transferirse a los alimentos. Como consecuencia, la legislación de la UE ha definido un límite de transferencia específico (SML) para el BPA.
