L’allergie à l’œuf touche principalement les jeunes enfants. La consommation d’œufs peut provoquer des réactions allergiques graves telles qu’un choc anaphylactique. Elle doit donc être strictement évitée.
Il est important de souligner que les œufs figurent parmi les ingrédients de nombreux aliments comme les pâtes alimentaires, les vinaigrettes, les produits de boulangerie ou la crème glacée. Les œufs de poule contiennent divers allergènes tels que l’ovomucoïde, l’ovalbumine, l’ovotransferrine et le lysozyme C. La plupart des allergènes de l’œuf se trouvent dans le blanc alors que le potentiel allergène du jaune est relativement faible. Pour garantir qu’un produit est sans danger pour les personnes allergiques, il est nécessaire d’en analyser la teneur en allergènes. Nous proposons des tests ELISA sensibles et des tests immuno-chromatographiques simples d’emploi pour la détection des protéines d’œufs dans les aliments.
