Céréales

De la récolte au produit final, nombreuses sont les étapes qui doivent être contrôlées et surveillées afin d’obtenir des produits sûrs et de haute qualité.

Les kits R-Biopharm peuvent être utilisés tout au long de la chaîne de production : des matières premières aux produits finis en passant par les étapes intermédiaires. Analyses des Mycotoxines

Les céréales figurent parmi les principales sources de mycotoxines dans la chaîne alimentaire humaine et animale ! Pour les fabricants, il est essentiel d’utiliser des tests fiables comme les tests ELISA ou bandelettes permettant de les détecter et de les quantifier afin de garantir la sécurité sanitaire de leur production.

Analyses des Allergènes

Il est aujourd’hui primordial d’étiqueter les ingrédients susceptibles de provoquer des allergies ou des intolérances. Les fabricants doivent tester les matières premières à réception ainsi que les produits finis. Analyses bactériologiques

La surveillance des agents pathogènes est cruciale pour assurer la protection du consommateur que ce soit des analyses sur les produits, sur les surfaces (chaines de production) ou encore sur le personnel (contrôle de l’hygiène). Ces contaminations peuvent avoir être un risque pour le consommateur ou pour la qualité organoleptique du produit devenant alors impropre à la consommation.

Détection des Organismes Génétiquement Modifiés (OGM)

La production mondiale de maïs, de riz et de soja génétiquement modifiés (OGM) est en constante augmentation. De nombreux pays ont fixé des seuils d’étiquetage de façon à informer le consommateur. Il est alors essentiel de réaliser des contrôles pour détecter leur présence et informer les consommateur au travers d’un étiquetage clair ! Les tests PCR sont les outils privilégiés pour réaliser ces contrôles.

Analyses des constituants

Des sucres et des acides comme le sorbitol, le saccharose ou l’acide citrique, sont souvent ajoutés aux produits de boulangerie. La mesure de ces composants permet de fournir des informations nutritionnelles sur l’étiquetage. Faciles à utiliser et permettant d’obtenir des résultats précis, les tests enzymatiques sont largement utilisés pour réaliser ces contrôles.

Analyses des Vitamines

Les produits céréaliers sont souvent enrichis en vitamines essentielles pour assurer des apports suffisants à la population. Les fabricants doivent s’assurer que la teneur en vitamines naturelles et ajoutées correspond à ce qui est indiqué sur l’emballage.

Fraude : Adultération

Le blé dur (ou Triticum durum) est la matière première de base pour fabriquer des pâtes. C’est aussi la variété la plus importante d’un point de vue économique, il peut alors être sujet à des fraudes par l’ajout d’autres variétés de blé non dur.
