Carnes
Na fabricação de produtos de carne, muitos passos precisam ser controlados e monitorados para garantir produtos seguros e de alta qualidade.
Os kits de teste da R-Biopharm podem ser aplicados em toda a cadeia de produção de alimentos: desde as matérias-primas até os produtos intermediários e finais, passando pela inspeção de mercadorias recebidas, monitoramento da higiene e, finalmente, análise do produto para rotulagem correta. Nosso grande portfólio de diferentes formatos de teste pode ser utilizado para analisar carne crua (bovina, suína, de aves), salsichas, presunto, tecidos comestíveis, matrizes de controle (por exemplo, cabelo) e muitos outros.
Antibióticos
O uso incorreto ou ilegal de antibióticos em animais pode levar à presença de resíduos de medicamentos na carne e nos produtos de carne, o que representa riscos à saúde dos consumidores. Além disso, o uso inadequado de antibióticos contribui para a multirresistência de bactérias patogênicas. O Regulamento de Comissão (UE) No 37/2010 estabelece níveis permitidos de antibióticos em alimentos de origem animal, por exemplo, na carne (músculo): 100 μg/kg de tetraciclina, 500 μg/kg de estreptomicina, 150 μg/kg de bacitracina e tolerância zero para cloranfenicol.
Hormônios e Anabolizantes
Resíduos de hormônios e anabolizantes na carne podem representar riscos à saúde dos consumidores. Portanto, na maioria dos países, o uso de hormônios e anabolizantes na criação de animais é completamente proibido, com exceções para fins veterinários.
Monitoramento de Higiene
Microrganismos como listeria, salmonella, Campylobacter, E. coli ou Staphylococcus aureus podem causar doenças alimentares. Além disso, é importante monitorar organismos típicos de deterioração para reduzir perdas durante a produção e garantir a estabilidade do produto até o prazo de validade declarado.
Micotoxinas
Carnes e produtos cárneos podem ser contaminados com ocratoxina A. Este metabólito secundário tóxico produzido por fungos pode acumular-se em vários produtos agrícolas. A contaminação da carne ocorre quando os animais são alimentados com ração contaminada com ocratoxina A. Carne contaminada pode representar um risco para a saúde humana.
Adulteração de Alimentos
Os preços e a disponibilidade variados de produtos cárneos de diferentes espécies animais (por exemplo, carne de boi, cavalo) oferecem oportunidades para a declaração incorreta de componentes da carne. A identificação de espécies animais é, portanto, muito importante para a garantia da qualidade. Além disso, o interesse na especiação animal baseia-se em razões religiosas (alimentos halal e kosher). Para evitar fraudes e danos financeiros, os fabricantes devem testar seus produtos com PCR em tempo real.
Ácidos, Açúcares e Outros Constituintes
Ácidos e açúcares são frequentemente utilizados como aditivos na produção de carne. Por exemplo, o ácido lático e o ácido acético são adicionados a produtos cárneos para aumentar a estabilidade microbiológica. O ácido ascórbico é utilizado como agente de coloração e antioxidante. O ácido cítrico melhora a descascabilidade de linguiças e estabiliza a cor, o sabor e o aroma. O ácido glutâmico intensifica o sabor. A glicose, a frutose, a lactose e a maltose são adicionadas para saborizar e atuar como conservantes. Portanto, a determinação do teor de ácidos e açúcares é muito importante na produção de carne.
Alergênicos
Misturas de especiarias usadas na produção de linguiças ou outros produtos cárneos podem conter aipo, glúten, mostarda, nozes, leite ou outros ingredientes que podem causar alergias ou intolerâncias. Na maioria dos países, é obrigatório rotular ingredientes que possam causar alergias ou intolerâncias. No entanto, a contaminação acidental é muito comum. Por isso, os fabricantes devem testar seus produtos para garantir a rotulagem correta e evitar recalls de produtos.
