Test sensibili per l’analisi della carne e dei prodotti a base di carne

Carne

Nella lavorazione dei prodotti a base di carne è necessario controllare e monitorare le varie fasi produttive per ottenere prodotti sicuri e di alta qualità.

I kit R-Biopharm sono utilizzabili lungo tutta la catena produttiva degli alimenti, dalle materie prime ai prodotti intermedi fino ai prodotti finali, dal controllo delle merci in entrata al monitoraggio dello stato d’igiene, per arrivare all’analisi del prodotto finito per la corretta etichettatura. Il nostro ampio portafoglio di test in formati diversi è utilizzabile per analizzare carne cruda (manzo, maiale e pollo), insaccati, prosciutti, tessuti commestibili, matrici di controllo (pelo) e molte altre sostanze.

Antibiotici

L’impiego scorretto o illegale degli antibiotici negli allevamenti può comportare la presenza di residui di questi farmaci nella carne e nei prodotti a base di carne, con rischi per la salute dei consumatori. Inoltre, un uso inappropriato contribuisce ad aumentare l’antibiotico-resistenza dei batteri patogeni. Il Regolamento (UE) N. 37/2010 della Commissione fissa i livelli consentiti di antibiotici negli alimenti di origine animale; per esempio, per la carne (muscolo): 100 μg/kg di tetraciclina, 500 μg/kg di streptomicina, 150 μg/kg di bacitracina e una tolleranza zero per il cloramfenicolo.

Ormoni e anabolizzanti

Residui di ormoni e di anabolizzanti nella carne possono comportare rischi per la salute dei consumatori. Pertanto, in molti Paesi l’impiego di ormoni e anabolizzanti negli allevamenti è totalmente vietato, con deroghe per l’uso veterinario.

Monitoraggio dello stato d’igiene

Microorganismi come Listeria, Salmonella, Campylobacter, E. coli o Staphylococcus aureus possono causare malattie di origine alimentare. È importante inoltre monitorare gli organismi inquinanti per ridurre le perdite durante la produzione e assicurare la stabilità del prodotto fino alla data di scadenza dichiarata.

Micotossine

La carne e i prodotti derivati possono essere contaminati da ocratossina A. Questo metabolita secondario tossico prodotto dalle muffe può accumularsi in vari prodotti agricoli. La contaminazione della carne avviene quando gli animali sono nutriti con mangimi contaminati da ocratossina A. La carne contaminata può rappresentare un rischio per la salute dell’uomo.

Adulterazioni alimentari

Le variazioni di prezzo e la disponibilità dei prodotti a base di carne provenienti da animali di specie diverse (es.: manzo, cavallo) può portare a dichiarazioni errate sui prodotti. L’identificazione delle diverse specie animali è quindi molto importante per la garanzia della qualità. Inoltre, l’interesse per l’identificazione della specie animale nei prodotti a base di carne si fonda su motivazioni religiose (alimenti halal e kosher). Onde evitare frodi e danni finanziari, i produttori possono analizzare i loro prodotti con la tecnica della real-time PCR.

Zuccheri, acidi e altri costituenti

Acidi e zuccheri sono spesso impiegati come additivi nella produzione della carne. Per esempio, l’acido lattico e acetico sono addizionati ai prodotti a base di carne per aumentarne la stabilità microbiologica. L’acido ascorbico è utilizzato come colorante e antiossidante. L’acido citrico rende più facile pelare gli insaccati e ne stabilizza il colore, il sapore e l’aroma. L’acido glutammico intensifica il gusto. Glucosio, fruttosio, lattosio e maltosio sono addizionati come aromatizzanti e conservanti. Il rilevamento del contenuto di acidi e zuccheri è quindi molto importante nella produzione della carne.

Allergeni

Le miscele di spezie utilizzate nella produzione di insaccati o di altri prodotti a base di carne possono contenere sedano, glutine, senape, frutta a guscio, latte o altri ingredienti in grado di causare allergie o intolleranze. Nella maggior parte dei Paesi è obbligatorio etichettare gli ingredienti che possono causare allergie o intolleranze, tuttavia la contaminazione involontaria è un problema molto frequente. Per questo i produttori dovrebbero analizzare i propri prodotti per assicurare che siano correttamente etichettati ed evitare richiami di prodotto.
