Viande
Lors de la fabrication de produits carnés, nombreuses sont les étapes qui doivent être contrôlées et surveillées afin d’obtenir des produits sûrs et de haute qualité.
Les kits de test R-Biopharm peuvent être utilisés tout au long de la chaîne de production alimentaire : des matières premières aux produits finis en passant par les étapes intermédiaires, de l’inspection des marchandises reçues à la surveillance de l’hygiène jusqu’à l’analyse des produits en vue de leur étiquetage approprié. Les différents formats de notre gamme de tests peuvent être utilisés pour analyser la viande crue (bœuf, porc, volaille), les saucisses, le jambon, les tissus comestibles, les matrices de contrôle (cheveux, par exemple), entre autres.
Antibiotiques
L’utilisation incorrecte ou illégale d’antibiotiques sur des animaux d’élevage peut entraîner la présence de résidus de médicaments dans la viande et les produits carnés, induisant des risques pour la santé des consommateurs. De plus, l’utilisation inappropriée d’antibiotiques contribue à la multirésistance des bactéries pathogènes. Le règlement (UE) n° 37/2010 de la Commission fixe les niveaux admissibles d’antibiotiques dans les denrées alimentaires d’origine animale, par exemple dans la viande (muscle) : 100 μg/kg de tétracycline, 500 μg/kg de streptomycine, 150 μg/kg de bacitracine et une tolérance zéro pour le chloramphénicol.
Hormones et anabolisants
Les résidus d’hormones et d’anabolisants présents dans la viande peuvent entraîner des risques pour la santé des consommateurs. Telle est la raison pour laquelle l’utilisation d’hormones et d’anabolisants est strictement interdite dans la plupart des pays dans le domaine de l’élevage, exception faite de leur utilisation vétérinaire.
Surveillance de l’hygiène
Les micro-organismes tels que Listeria, Salmonella, Campylobacter, E. coli ou Staphylococcus aureus peuvent provoquer des maladies alimentaires. Les organismes généralement responsables de l’altération doivent également être surveillés afin de réduire les pertes pendant la production et assurer la stabilité du produit jusqu’à la fin de la durée de conservation déclarée.
Mycotoxines
La viande et les produits carnés peuvent être contaminés par l’ochratoxine A. Ce métabolite secondaire toxique produit par les moisissures peut s’accumuler dans divers produits agricoles. La contamination de la viande se produit lorsque les animaux sont nourris avec des aliments contaminés par l’ochratoxine A. La viande contaminée peut présenter un risque pour la santé humaine.
Fraude alimentaire
Les prix et la disponibilité des produits à base de viande de différentes espèces animales (bœuf et cheval, par exemple) étant très variables, les possibilités de déclaration incorrecte des composants sont légion. L’identification des espèces animales est donc très importante du point de vue de l’assurance qualité. D’un point de vue religieux (nourriture halal et kascher), la détermination des espèces animales a également toute son importance. La PCR en temps réel permet aux fabricants de tester leurs produits afin d’éviter la fraude et les préjudices financiers.
Acides, sucres et autres composants
Les acides et les sucres sont souvent utilisés comme additifs dans la production de viande. Par exemple, de l’acide lactique et de l’acide acétique sont ajoutés aux produits carnés pour obtenir une meilleure stabilité microbiologique. L’acide ascorbique est utilisé comme colorant rouge et comme antioxydant. L’acide citrique améliore la pelabilité des saucisses et stabilise la couleur, le goût et la saveur. L’acide glutamique intensifie le goût. Le glucose, le fructose, le lactose et le maltose permettent de renforcer les propriétés aromatisantes et conservatrices. Il est donc fondamental de déterminer la teneur en acide et en sucre des produits à base de viande.
Allergènes
Les mélanges d’aromates utilisés pour fabriquer des saucisses ou d’autres produits carnés peuvent contenir du céleri, du gluten, de la moutarde, des fruits à coque, du lait ou d’autres ingrédients pouvant induire des allergies ou des intolérances. Dans la plupart des pays, il est obligatoire d’étiqueter les ingrédients susceptibles de provoquer des allergies ou des intolérances. Cependant, la contamination involontaire est très fréquente. C’est pourquoi il est recommandé aux fabricants de tester leurs produits afin d’en assurer le bon étiquetage et d’éviter les rappels.
