Alérgenos alimentarios

Para la mayoría del público general, el consumo de alimentos es inofensivo. Sin embargo, puede provocar reacciones potencialmente mortales a personas alérgicas a los alimentos y limitar de forma drástica su calidad de vida.

Los científicos calculan que aproximadamente 2-4 % de los adultos y el 6-8 % de los niños sufren alergias alimentarias, y que un enorme número de personas sufre intolerancias alimentarias; además, su prevalencia es difícil de calcular debido a la falta de estudios. Las auténticas alergias alimentarias, diferentes de las intolerancias alimentarias, son muy peligrosas para los pacientes, ya que se deben a reacciones inmunitarias erráticas. Estas reacciones están provocadas normalmente por proteínas a las que ya están sensibilizados los sujetos alérgicos.

El etiquetado de estas proteínas alergénicas (denominadas alérgenos) es extremadamente importante para las personas alérgicas. En este contexto, los alérgenos ocultos son peligrosos debido a su inclusión, por ejemplo, en platos precocinados o por contaminación accidental durante el almacenamiento y producción de los alimentos.

Regulación de alérgenos

Para proteger a las personas alérgicas del consumo no deseado de alérgenos, se ha aprobado una normativa de etiquetado de alimentos en la UE. Esta normativa se actualiza y revisa continuamente (normativa 1169/2011 de la UE, en vigor desde diciembre de 2014). Desde noviembre de 2005, los productores de alimentos se han comprometido a etiquetar los ingredientes que pueden provocar alergias o intolerancias.  Esto incluye las siguientes sustancias y alimentos derivados de ellas:

Además, las concentraciones de dióxido de azufre y sulfitos superiores a 10 miligramos por kilogramo se deben especificar en la etiqueta. En otras naciones también se ha aplicado normativa sobre etiquetado (adaptada a los alérgenos específicos del país) en relación con, por ejemplo Histamina.

Análisis de alérgenos

En la mayoría de las líneas de producción se elaboran varios productos, lo que puede dar lugar a contaminación accidental con alérgenos. Para proteger a los consumidores y garantizar un etiquetado adecuado, es necesario aplicar un análisis de alérgenos apropiado. Con este fin, R-Biopharm ofrece técnicas inmunoquímicas y de biología molecular.
