Prodotti lattiero-caseari
Dalla produzione dei latticini fino al prodotto finale è necessario controllare e monitorare molte fasi della catena produttiva per ottenere prodotti sicuri e di alta qualità.
I kit R-Biopharm sono utilizzabili in qualunque fase della catena produttiva dei latticini, dalla materia prima ai prodotti intermedi fino ai prodotti finali, dall’ispezione delle merci in entrata al monitoraggio dello stato d’igiene, fino all’analisi del prodotto finito per una corretta etichettatura. La nostra ampia gamma di test in differenti formati si presta per l’analisi del latte, del latte in polvere, del formaggio, dello yogurt e di molti altri latticini.
Monitoraggio dello stato d’igiene
I latticini contengono vari microorganismi. In molti casi, i batteri sono necessari o addirittura indispensabili, come nella produzione del formaggio; altri microorganismi invece, come Salmonella, Listeria, E. coli, Staphylococcus aureus o Bacillus cereus sono patogeni e possono causare malattie di origine alimentare. È importante monitorare gli organismi inquinanti in modo da ridurre le perdite durante la produzione e assicurare la stabilità del prodotto fino alla scadenza dichiarata in etichetta.
Micotossine
Quando gli animali in lattazione sono alimentati con mangimi contaminati da aflatossine, l’aflatossina M1, potenzialmente tossica, è secreta con il latte. Poiché l’aflatossina M1 è relativamente resistente al trattamento termico e ai processi di lavorazione del latte, si raccomanda di controllare sia il latte crudo che il prodotto finito.
Antibiotici
Oltre a un potenziale rischio per la salute del consumatore, i residui di antibiotici comportano anche un rischio di tipo economico in quanto possono inibire i processi di produzione biotecnologica che utilizzano i microorganismi. Il Regolamento N. 37/2010 della Commissione (UE) fissa i livelli consentiti di antibiotici negli alimenti di origine animale; a es., per il latte 4 μg/kg di penicilline, 100 μg/kg di tetracicline e una tolleranza zero per il cloramfenicolo.
Adulterazioni alimentari
Il latte è tra gli alimenti più frequentemente adulterati. I nostri sensibili kit analitici si prestano per l’individuazione di prodotti a base di latte adulterati a fini economici.
Allergeni
Milioni di individui devono fare attenzione ad assumere latte e latticini perché intolleranti al lattosio. In molti Paesi vige l’obbligo di etichettatura degli ingredienti che possono causare allergie o intolleranze. Purtroppo la contaminazione involontaria rimane molto frequente. Per questo le aziende alimentari devono analizzare i propri prodotti per assicurare una corretta etichettatura ed evitare richiami di prodotto.
Zuccheri, acidi e altri costituenti
L’analisi enzimatica è uno strumento prezioso per l’identificazione di varie sostanze presenti nel latte e nei prodotti caseari, come lattosio, acido lattico, acido glutammico, ammoniaca, nitrati o etanolo. Molti metodi enzimatici sono stati approvati o validati da organizzazioni internazionali come AOAC (per es. il metodo ufficiale 984.15, lattosio nel latte), International Dairy Federation (per es. IDF 34C, acido citrico nel formaggio e nel latte) e ISO (per es. ISO 11285, lattulosio nel latte).
Vitamine
I latticini sono spesso arricchiti con vitamine per assicurarne un sufficiente apporto alla popolazione. Le aziende produttrici hanno quindi la necessità di accertarsi che il contenuto di vitamina aggiunta e di vitamina naturale corrisponda a quanto riportato sulla confezione fino alla scadenza del prodotto.
