Aflatossine
Le aflatossine sono metaboliti secondari prodotti da funghi delle specie Aspergillus flavus, A. parasiticus e A. nomius, endemiche nelle zone tropicali umide. Le aflatossine sono altamente tossiche anche a basse concentrazioni e sono tra le più importanti sostanze cancerogene naturali.
Le aflatossine possono essere presenti in molti alimenti differenti. I tipi di aflatossine più importanti sono:
È il tipo di aflatossina a più alta prevalenza e tossicità. È quasi sempre presente insieme alle aflatossine B2, G1 e G2. Si trova comunemente nel mais, nelle arachidi, nelle noci del Brasile, nei semi di cotone e nei pistacchi, ma può essere rilevata anche in altri alimenti come riso, miglio, mandorle, anacardi, peperoncino, caffè, spezie, semi oleosi o frutta secca.
Questo tipo di aflatossina è prodotto come metabolita dell’aflatossina B1, quando vacche in lattazione mangiano mangimi contaminati; viene secreto con il latte e può essere presente in formaggi e altri prodotti caseari. Dal momento che l’aflatossina M1 è relativamente resistente ai processi di pastorizzazione, è necessario controllare abitualmente tanto le materie prime quanto i prodotti finiti.
Al fine di tutelare i consumatori dagli effetti nocivi delle aflatossine, molti Paesi hanno introdotto limiti specifici. Alimenti che superano tali livelli massimi consentiti non possono essere commercializzati. In accordo con il Regolamento n. 1881/2006, il valore limite consentito nella UE è pari a 4 µg/kg. Analisi regolari sono necessarie per garantire che gli alimenti prodotti non superino tale valore limite.
