Aflatoxin
Aflatoxins are secondary metabolites produced by the fungi species Aspergillus flavus, parasiticus and nomius. These fungi occur in humid tropical areas. Aflatoxins are highly toxic even in low concentrations. In addition, they belong to the strongest natural occurring carcinogenic substances.
Aflatoxins may be present in many different foods. The most relevant types of aflatoxins are as follows:
This is the most prevalent and most toxic type of aflatoxins. It appears nearly in all cases together with Aflatoxin B2, G1 and G2. It is commonly found in corn, peanuts, brazil nuts, cotton seed and pistachios. But also other foods such as rice, millet, almonds, cashews, chillies, coffee, spices, oilseeds or dried fruits can be affected.
This type of aflatoxins is produced as a metabolite of aflatoxin B1, when lactating cows eat contaminated feed. It is secreted with the milk and may also be present in cheese and other dairy products. As aflatoxin M1 is relatively stable towards the pasteurizing process, not only a comprehensive routine check of the raw materials to be processed is required, but also of the final products.
In order to protect consumers against the harmful effects of aflatoxins, many countries specified limit values. Food exceeding these maximum permitted levels shall not be placed on the market. According to regulation no. 1881/2006, the limit value in the EU is 4 µg/kg (total aflatoxin content). To ensure that the produced food does not exceed this limit value, regular analyses are necessary.
